View topic - Best ribs?

It's a 7 hour 19 minute (19?) drive from my house to the town of Temagami so it would have to be a long weekend. No bugs over the May long weekend, right?

I would have to check and re-check before committing to anything though, there's the rub.


Would you be teaching the class? If someone brings bear then I guess we could have sbear ribs.

Sorry. Our food class is in La Verendrye and not sure if it will consist of BBQ. Also it involves the requirement to paddle in all equipment in a canoe, solo.

You can do much better in a microbrew than that peewater Heineken.

I would be happy to help with the class. Bear ribs will be a special treat, for sure.

I'm about 40 minutes north east of Temagami, with about 5 acres on a good paddling creek and lots of campsites. The class could be here if you like.

ugh, thats blasphemy... heinekin is about a half step above love-in-a-canoe beer.

for ribs, or any other bbq pork type stuff, you cannot beat waupoos cider.

Ice cold is best, but lake-cold is good enough. That or mill street brewery's hellesbock sp?

So now, after discussing rubs, cooking temps, smoking techniques (no one has yet mentioned the type of soil that yields the best type of wood for smoking) I guess it's high time we probe deeply into the best beverage to fuel the cook.

My apologies if my predilection for H. ruffled sensitive pallets. I hope y'all will be able to look beyond that.

Obviously, the brew of choice is a personal thing. More important is to have enough of your favourite beverage on hand.
My experience is that ribs take at least 4 beers to prep and cook, another couple to eat the ribs and God only knows how many more to fuel the after dinner analysis of the results of the cook.......
Whew! I'm getting thirsty just thinking about it.

BTW here's a vote for Creemore Springs or Wellington County Ale

One beer I would recommend highly is Trois Pistoles from the Unibroue (not uni-brow ) Brewery. CLICK
A couple 750 ml bottles of 9% beer should be plenty for the smoking process.

Regarding Unibroue beer for drinking while cooking the best ribs, I noticed the other day that Unibroue is selling in Saskatchewan LBS's, a variety pack case of 12 bottles for $20.50 (giver or take a couple of quarters). That is far and away the best value in the store when considering price and quality. It's also the best bang for your buck since half of that case is 8% & 9% alcohol content.

The other night while at a party with paddling friends, I brought along a case of Unibroue. Being there for the long haul, I was moderating my consumption of Maudite (a big bold beer at 8% alcohol) by switching between that and the light in colour La Fin du Monde, figuring it was in the more normal 5% range alcohol-wise. I greatly slowed my rate of consumption when I realised my "light" beer had a 9% alcohol content and I was twice as drunk as I thought I was. Good thing I didn't have to drive anywhere!

I really liked the Maudite, and was fine with La Fin du Monde though a bit too yeasty for my liking. I have only seen the 750 ml bottles here in Alberta for about $6 each, though I really haven't looked for the smaller bottles. There are a couple I have not tried yet too.

I'm going to have to check out Unibroue. We live very close to Quebec and shop there regularly but have never sen it on the shelves. Maybe that's because it doesn't get up to northern Quebec but I will look again.

I found out about Unibroue when asking a worker in a local liquor store, who writes beer reviews, for a recommendation. I told him I liked most of the Belgium beers I had tried. He had a few recommendations of imported beer, then steered me towards the Unibroue offerings. I guess it is a Belgium brew master that started the brewery.

What's the name of that Chinese brew? Tsingtao? Nice beer. Don't know how well it "works" with ribs.
