Broccoli Veg. Soup

Ingredients:

2 onions ( chopped and dried)

2 red pepper (chopped and dried)

2 green peppers (chopped and dried)

1 cup dried mushrooms

5 cups of broccoli, (chopped and dried)

3 cloves of garlic chopped and dried

1 cup orzo pasta

1 tbsp soy sauce

1 tbsp lemon juice

2 tbsp basil

2tbsp parley

1tsp tarragon

1 cup slivered almonds

1 pkg of vegetable soup broth (Knorr)

6 cups water optional

1 cup of grated cheese (parmesan or chedder)

Instructions:

Make a paste of the veg. soup broth, and then slowly add water to make up the 6 cups. Add in all of the rest of the ingredients except the almonds. Simmer to rehydrate veggies, adding more water if necessary. Add almonds and sprinkle with cheese just before serving.
