Panuke lake off off a uke road in windsor is the longest lake in Nova scotia I believe and about a 5-7. Hour paddle to the end and it gets fairly remote - its a beautiful lake. There is also kayaking options under the damn as well you can access off of salmon hope dam road.

Card lake (card lake provincial park) is a small lake that you can spend a day on- no motor boat traffic and no cottages at the end of the lake it's a very beautiful paddle. If water levels are low lots of sandy beach areas a (lots of leeches if you plan to swim)
