A couple of weeks ago, the Passionate Paddler and I spent the weekend paddling and hiking in Killarney PP. Not knowing whether or not we'd encounter ice on the lakes, we elected to set up camp just a few kilometres from the launch. With no portages, we loaded up the gear and food - winter tent, wood stove, a cot for David and fresh food and a cast iron frying pan, something I rarely take on canoe trips.
With all of the luxuries on hand, I was able to cook some grass-fed beef steaks the first night, and this lobster frittata for breakfast the next day.

I never have made lobster frittata.. I am at the most thinking of whipping up a batch of lobster filling for canapes Christmas Eve.

I find the flavor or lobster sometimes gets buried ie in lobster mac and cheese unless you are careful.. What else did you use in the frittata? I agree its a great way to use leftovers and who needs pie crust?

Full recipe is in the link, but basically I throw in whatever is in the fridge. I make it pretty well every day, with tons of vegetables and meat of the day - steak, lobster, shrimp, fish, chicken, pork, or often no meat. For this particular frittata, I used a full pound of lobster so it certainly didn't get lost. :)

The full recipe mentions it is possible to dehydrate it. I have never dehydrated something with eggs in it but I have dehydrate most of the other ingredients and used bought dried or crystallized eggs.
