Saw this recipe on CTV noon news today and thought it would be a nice addition to our trips. Thought i share it.

WHEAT-FREE CRANBERRY WALNUT GRANOLA

Makes about 12 cups.

3 cups rolled oats
3 cups coarsely chopped walnuts
1 ½ cups flaked coconut
1/3 cup ground flax seeds
3/4 cup each: maple syrup and packed dark brown sugar
1/3 cup canola oil
1 ½ tablespoons warm water
½ teaspoon salt
1 1/4 cups dried cranberries

1. Lightly grease a rimmed baking sheet or line with
parchment. Preheat oven to 275°F.

2. In large bowl stir together oats, walnuts, coconut
and flax seeds. In small bowl whisk together
remaining ingredients except cranberries. Pour sugar
mixture evenly over oats mixture; stir to
mix well. Spread evenly on baking sheet.

3. Bake for 1 to 1 1/4 hours, stirring every
20 minutes, until mixture is nicely browned. Stir in
cranberries. Cool completely. Store in an airtight
container at room temperature.

Variation: Apricot Almond Granola: Replace walnuts
with almonds: a mix of slivered, sliced
and coarsely chopped whole almonds. Replace
dried cranberries with chopped dried apricots.

This is a recipe I frequently make to take along it is a great snack along the trail. I wrap the bars individually in waxed paper.

Energy Bars

1 cup rolled oats
1/4 cup pastry flour
1/2 cup wheat germ
1 tsp vanilla
1/2 cup almonds 1/2 cup sun flower seeds
1/2 cup each dried fruit - dates, cranberries, raisins

Blend together 1/2 cup non fat powdered milk and 1/2 tsp cinnamon and add to mixture
Stir together 1/2 cup maple syrup and two eggs then add to dry ingredients
Place in pan and bake 350 degrees for 20 minutes

I double recipe and bake in a 9x13 pan
