Fishing with some friends for ten days and want to use the dutch oven as a good morale tool:)

Want to make a few cakes/desserts. Thinking pineapple upside down cake, fruit cobblers, and maybe a banana nut cake. I want some ideas/recipes for cobblers if anyone has any. We will have a cooler and access to a store on the way so it should be easy to put together. Also thinking about a few dinners. Maybe chilli, lasagna, and gumbo/stews. Any suggestions?

Berry Cobblers- I usually make it up in the field depending on what berries/fruit are available.
1.) The crumble crust/topping is basically a mixture of 1/2cup oats, 1/3cup flour, 1/4cup butter, 1/3cup brown sugar, sprinkle of salt, sprinkle of cinnamon. Put all in a pot and mix/crush/mash the butter well into the dry stuff. Firmly pat 1/2 of this crumble mix into the bottom of your oven.
2.) Fruit: I've used raspberries, blueberries, strawberries, cranberries dehydrated apples(like apple crisp)... whatever. If your using dehydrated, mix it with a LITTLE water and sugar, pour onto crumb base and sprinkle the rest of the crumb on top. Bake for 10-20minutes, depending on how hot your fire and coals are. If your using fresh picked fruit, DO NOT add water. Instead, toss the fruit with about 2tbsp of flour and sugar. (The flour will help the berry juice to thicken into a sauce)

Dan,
I just recently acquired a dutch oven.
I have been looking into recipes, but I haven't had a chance to try any yet. So far I have just got my oven seasoned, but I found a couple of sites with some tempting recipes:

Cheers,
Jeff

For a really filling 2nd or 3rd day meal take a large frozen roast (wrap it in foil and wet newspaper before freezing and double bag it and it'll last 3 days or so without a cooler) and throw it in with about 1/2c water, some potatoes and carrots. keep your heat ratio about 3x on top-2x on bottom (eg 12 coals on bottom, 18 on top) for about 2 1/2 - 3hrs.
You can get more recipies here http://macscouter.com/Cooking/ there are even a few Adobe books you can download or print out :)

Ok, I don't have a dutch oven, but just gotta say.....instead of pineapple upside-down cake, switch it to cinnamon-dusted peaches upside-down cake. :D

Thanks for the replies and links. Found some interesting recipes on the links. I am wanting to make lasagna one night and chilli one night. Anyone have any experience making these in dutch ovens. Anyone have time to share some details or recipes if applicable. Thanks for any thoughts.

I have only made this recipe using my reflector oven or my outback oven but I am sure it can be made in a dutch oven. When taking on a trip I bring dried apples and rehydrate in camp and I use powdered whole eggs.

Camping Cobbler
2-4 cups of fruit layered in bottom of 7x11 baking dish.
1 cup self rising flour
1cup sugar
1 egg.
Sprinkle mixture over fruit. Drizzle 1/3 cup oil over mixture. Sprinkle with Cinnamon if desired. Bake 350 for 30-40 minutes.
To make self rising flour , 1 cup all purpose flour , ½ teaspoon salt, 1 ½ tsp baking powder. Mix together for 1 cup of self rising flour.

I guess I'll have to be the first to ask.

What is the name of this dutch oven recipe you use?

This isn't a recipe question but I am looking into purchasing a Dutch Oven as well since I just picked up the Blackfeather cookbook and most of the meals need a dutch oven!

Suggestions on Where and What models are good?

Thanks
Brian

Yeah, I agree on the GSI. I have the 10" and 12". Nice to take on canoe trips as they are so light. Ordered mine from Campmor website and got the carrying cases which I am very impressed with as well.

For the pineapple upside down cake: Sometimes its just too sweet, so we use a lemon cake mix instead.

Peach Melba: Use a white or yellow cake mix, pour in peaches, (use the peach juice in place of the water in the cake mix), sprinkle on brown sugar, bake. When it's all done, heat some raspberry sauce (black or red), and drizzle or pour on top. The raspberry sauce is also great on the pineapple upside down cake as well.

We also like to cook pork chops, potatoes and sauerkraut.

This is only when we do car camping or just a short trip down the river. Otherwise, its the outback oven.

Most of all: experiment and have fun.
