I was wondering if there is anything different to do when dehydrating pork, as opposed to beef.

Any health issues or extra steps to take?

I haven't done anything different. Actually to me ground pork tastes better. If you can get as close to fat free of course its best.

I have dried ground pork, and also ground sausage, but was not as pleased with the results as compared to ground beef.

Shredded pork dries and reconstitutes very well.

The texture can be a welcome change.

I have done pork using ground pork from tenderloin, good low fat stuff, and as shredded pork from from a low fat loin roast, cooked slowly for several hours... good stuff.

I just finished a 1.5kg batch of lean ground pork, and it looks good.
