I see this mentioned a lot and have googled a few times but can never seem to find a good explanation within the context of canoes. All I can tell is that it seems to be just variations of fiberglass - I'm really not sure beyond that what makes one type special vs another type.

Looks to me like it a chemical makeup variation with the S glass being stiffer (and more expensive) according to other threads I have seen from a few googly searches.
I would imagine manufacturers may use one or the other depending on the canoe being produced (stiff vs more 'flex') and budget considerations.

Check out Nick Schade’s The Strip Built Sea Kayak and Ted Moore’s Canoecraft if your thinking about a cedar boat.
Nick describes S Glass as stronger and E Glass as the common type.

S-glass is theoretically stiffer and stronger than e-glass, it's more expensive which is a consideration is you are using a large quantity but for patches, skid plates the price difference really doesn't matter.

I've been using s-glass for repairs (patches) and skid plates for a couple of years, the results seem to be better than the alternatives but I want to add the dynel for high wear situations like skid plates.
