you doing specific theme like single pass or ultra light?
if not I wouldn't worry about weight. It's 4 nights. Unless there's a single food barrel? hand each pair a sobey's bag....this is what your entire supply must fit in.
send out serving sizes..... one serving of rice pasta ect is such and such dry
unless you plan the entire set of meals (and really, it's about sharing)
then there is little possibility of taking advantage of left over rice for a wee bit of pudding in the morning....or instant mashed latkas in the morning (my appologies to Pake, i can't speel in english either

)

make sure someone who drinks coffee is in charge of bringing it and whatever you brew it in
if someone has a "die for" fresh meal specialty give them the first supper
mail out your allergies and super dislikes so people can adjust recipies
I'm not a weight watcher, there are some folks here who are experts, hope they give you some pointers
