I just got back from a trip. On a whim, I brought along a small avocado and made guacamole.

It turned out really well and I thought you might be interested.

Skinned and pitted the avocado, diced up a bit of onion and put it all in a small zip lock bag. Added a bit of olive oil.

Used my fingers to squish it all up, cut a corner of the bag and then piped the contents onto crackers.

It was awesome. Fresh and sweet. A real treat that did not need any refrigeration.

How did you keep it looking pleasant? Without lemon juice spritzer avocados look icky after peeled.

We made Guacamole on a kayak trip on Lake Superior a few years back...
(no real weight restrictions on a sea kayak trip... 8) )

We used a dry, pre-packaged seasoning mix - all you added were the avocados and some lemon juice. The results were excellent.

The challenge is transporting the avocados without bruising them...

I think you hit the nail on the head... the other thing is that I like tortilla chips with my guac, and those take up too much space in the barrel for my liking.

I make Guacamole all the time at home, out of 100% fresh ingredients. It's really easier than buying the package as most people have all the ingredients in their refrigerator. I mean I've got it down to the point that I can make Guac in less than 2 minutes. I use lime instead of lemon. A bottle of lime juice works nearly as well, especially when the limes start looking kinda shakey at the grocery.

I love making fresh guacamole in the summer time. I also use a little lime juice to give it a little refreshing kick. Guacamole is almost impossible to store, I usually eat mine right then and there.
