Somehow the instant mash variety doesn't quite tickle my fancy!

I sliced up a big Russet into thin strips and dehydrated it. Mixed a sample with some onions and fried them in a little oil---added water to the pan to help cook them. Tasted quite good, in my somewhat biased opinion!! Will do some more!

I am a fan of the instant variety and of spuds in general.
Try grating them then blanch in boiling water. Dry in your dehydrater or oven.
Add water and cook along with any ova and/or vegetable, spice, protein that floats your boat.

The Irish eat potatoes and they invented Guinness.
Just saying ....

I could tell you of my own experience with the Irish and potatoes but it would have to go in the off topic! It ended badly!

Wotrock, did you par-boil before drying to prevent them turning dark?

No, I didn't bother as this was a 'pilot project' It didn't matter much when fried with onions. Nevertheless, I was going to dip my next one in lemon juice. That seems to work for apple etc.

It was quite easy to do as my 'dehydrator' is a home made 'jobbie' that sits atop our wood stove, so it was just a matter of 'peeling and placing"--Ok, as a bit of shuffling.


Update---did one more with lemon, worked well, no discoloration.

My only major problem with most commercial dehydrated spuds is they add too much salt. From time to time you can find the big jumbo box of unsalted at Costco.

I didn't know one could buy dehydrated spuds apart from mash, which I found super bland. Now I have found out that, for me, they are super easy to do, less time consuming than going to the store.

Another spud option is to buy frozen bricks of hash browns, sold in packages of 20 at Walmart or Aldis. break them up and dehydrate. It doesn't take long. After drying, further crush it into granules. It will rehydrate in hot water in about 5 minutes. I like to serve it at camp with a country gravy mix and maybe rehydrate some ground beef or another meat of choice (such as home dehydrated chipped beef). yum.

My wife loves hasbrowns and these dehydrated packs from Costco pass the taste test. The package says 7 servings per carton, but I would say 4 is more realistic. Add hot water, let sit for 12 min, pan fry for minutes.

Costco dehydrated instant mash is the best of all the commercial store bought stuff imho.

Needs a ton of salt though

Those hash browns had waaay too much salt for me.

They are soak and drain; it seems to have been okay for salt and the boss isn't a salt fan... Always ate them with something so maybe that's part of it....

I got on a roll last winter with the wood stove.Also did sweet pot, which taste good w/ocooking. Got totally carried away with parsnips. DIL,on a visit, quite liked them as a snack and was given a bag to take home.I used some as well as a snack out snowshoeing and ice fishing. Did peppers,zucchini etc etc.
