Broccoli Veg. Soup


2 onions ( chopped and dried)

2 red pepper (chopped and dried)

2 green peppers (chopped and dried)

1 cup dried mushrooms

5 cups of broccoli, (chopped and dried)

3 cloves of garlic chopped and dried

1 cup orzo pasta

1 tbsp soy sauce

1 tbsp lemon juice

2 tbsp basil

2tbsp parley

1tsp tarragon

1 cup slivered almonds

1 pkg of vegetable soup broth (Knorr)

6 cups water optional

1 cup of grated cheese (parmesan or chedder)

Make a paste of the veg. soup broth, and then slowly add water to make up the 6 cups. Add in all of the rest of the ingredients except the almonds. Simmer to rehydrate veggies, adding more water if necessary. Add almonds and sprinkle with cheese just before serving.


If you want to prepare this fresh change quantities to: 1 each of onion,red pepper, green peppers 1/2 mushrooms This is nicer if you use fresh veggies, and saute them first in a bit of oil. Change the quantities to: 4 cups of broccoli, (chopped and dried) If you are not into drying your food, you can buy everything except the broccoli already dried at the bulk food store. Remember that veggies reduce by 3/4 or more when dehydrating.
